Appenzeller exhibition cheesemaking centre

"A hearty welcome to the Appenzeller exhibition cheesemaking centre". Or its equivalent in broad Swiss dialect! During the tour you can look directly into the 6,000 litre cheese vat, where the milk is prepared and the harp-like cheese slice is drawn through the setting mass. And don't forget to taste a piece of Appenzeller cheese!

How the holes get into the cheese

In a classical setting among the rolling hills of the Pre-Alps nestles the Appenzeller exhibition cheesemaking centre. Here the visitor can gain an insight into traditional customs as well as the latest cheese-making technology.

Ssshhh... You're on the track of one of their best-kept secrets! From the visitors' gallery of the Appenzeller exhibition cheesemaking centre you can enjoy a live daily performance of the Appenzeller cheese production process! You can look directly into the 6,000 litre cheese vat, where the milk is prepared and the harp-like cheese slicer is drawn through the mass as it sets. It's pretty impressive, looking down six metres onto 13,500 slowly ripening cheeses. The after-care of these cheeses is fully automated, and it's fascinating to see how it is all organised.

But the most important aspect of the visit has to be the tasting.  Which one do you like best? The "normal", the "matured" or maybe even the "extra"? You'll probably want to buy a piece in the shop to take home with you.
